Creamy Cauliflower Soup

Cold weather has me craving hot, cozy meals. This soup is simple to make, full of delicious flavors and so good for you! ENJOY!!

Creamy Cauliflower Soup

INGREDIENTS

  • 2 Tablespoons olive oil

  • 1 medium onion, diced

  • 3 cloves garlic, minced

  • 1 large head cauliflower, cut into florets

  • 1 teaspoon fresh thyme or 2 sprigs

  • 5 cups low-sodium vegetable broth or water

  • ½ cup oatmilk

  • juice of 1 small lemon

  • Salt + pepper, to taste

DIRECTIONS

In a heavy bottom pan, heat the oil over medium heat, add the onion and sauté for 6 minutes. Add the garlic and cook for 1 minute more.

Add the cauliflower, thyme, salt and pepper, and water/broth. Bring to a boil, cover, reduce heat and simmer, stirring occasionally, for 20 minutes, or until cauliflower is fork tender. Stir in the oatmilk and lemon juice and let rest for 10 minutes. Puree with the blender until smooth.
