Parmesan Crusted Zucchini Chips

Zucchini is a very low calorie vegetable…it has only 20 calories per cup!  They are rich in heart healthy vitamins and minerals and grow abundantly in our garden!  They have a delicate flavor and taste delicious is a wide variety of dishes.  One of my favorites is parmesan crusted zucchini chips.  They are so simple to make…a definitely a crowd pleaser.  Keep in mind that the darker the skin the richer the nutrients.  So look for deep colored, small to medium sized zucchini…not only do they provide more nutritional value, they are also the most flavorful!

Parmesan Crusted Zucchini Chips

2-3 medium zucchini

2-3 egg whites, lightly beaten

1/4 cup whole wheat bread crumbs

1/4 cup freshly grated parmesan cheese

Pre heat oven to 350 degrees.  Combine the bread crumbs and cheese on a flat plate.  Slice the zucchini and dip in egg whites.  Then dredge the slices in the bread crumb mixture.  Bake until brown, turning halfway through about 20 minutes.
