Looking to add an extra powerful nutritional punch to your afternoon snack?  Then grab some Kale…and make kale chips.  Kale a good source of fiber, rich in vitamins A, K and C, packed with a generous amount of calcium and makes a delicious salad, side dish and snack!

The trick is to place the kale on a cooling rack over a baking sheet.

Kale Chips

Rip the hard center core out of the kale and then wash well and dry. Place the kale on a cooling rack over a baking sheet (see photo). Spray with olive oil (I like using the Misto olive oil spray) and sprinkle with kosher salt. Bake at 250 for about 20 minutes until dry and crunchy. This is a GREAT afternoon snack.
