Raw Kale Salad

I LOVE kale.  It’s beautifully green, full of health benefits and SO versatile!  Kale is a great source of fiber, rich in vitamins A, K and C AND packed with a  generous amount of calcium.  You can turn it into chips…yes chips that your entire family will enjoy!  You can saute it like spinach and serve as a delicious side dish or chop it into an amazingly, refreshing salad.  Any way you cook it it’s sure to be delicious!

Raw Kale salad is one of my favorites.  It takes only minutes to whip up, but will last for days in the refrigerator without wilting.  Simply chop the leaves into bite sized pieces (I like to use a food processor for quick and easy chopping), whisk together the simple dressing and toss everything together.  It’s perfection!

Raw Kale Salad

  • Large bunch of Kale, washed, dried, de-ribbed and chopped into bite sized pieces (I like to chop it in batches in the food processor)

  • 2 tablespoons pine nuts, toasted

  • 2 tablespoons currants

  • 1-1.5 ounces of grated parmesan cheese

  • 1 tablespoon olive oil

  • juice of ½ lemon

  • 1 teaspoon honey

  • Salt, to taste

Place chopped kale in a large salad bowl. Toss with pine nuts, currants and Parmesan.

In a separate bowl, whisk together oil, lemon juice, honey and salt.  Drizzle over the kale and toss well.  Let sit for about 20 minutes before serving.
