Squash “Noodles”

As you may have figured out, I’m OBSESSED with my spiral vegetable cutter (The Paderno Spiral Vegetable Cutter) It is truly amazing.  Tonight I made “noodles’ out of squash.  Just place the squash between the base and the blade and spin.  It’s such a simple tool…even a three-year old can use it (with supervision, of course!)

We created a beautiful plate of spiral cut squash “noodles” ready to be sauteed with a bit of garlic and olive oil.

Squash “Noodles”

1 medium green or yellow squash

olive oil (I like using the Misto spray to cut back on quantity)

1 clove garlic, minced

black pepper

1/2 ounce shredded parmesan cheese

 

Use a spiral vegetable cutter to “spiralize” the squash (alternately you could cut long strands with a vegetable peeler).

Heat a saute pan over medium-high heat and spray with olive oil.  Add the garlic and saute for 1-2 minutes.  Add the squash “noodles” and saute another 4-5 minutes, until tender.  Remove from heat and toss with freshly ground black pepper and shredded parmesan cheese.
