Sautéed Swiss Chard and Bok Choy over Whole Grain Pasta

Bok choy is chock full of nutrients. It is high in vitamins A and C, beta-carotene, calcium AND dietary fiber. Swiss Chard is another nutritional powerhouse. One cup contains only 35 calories but provides more than 300% of the daily value for vitamin K. It is also an excellent source of vitamins A and C and a multitude of phytonutrients. This dish combines two amazing greens into one nutritionally (and flavor) packed dish.

Sautéed Swiss Chard and Bok Choy over Whole Grain Pasta

  • 2 teaspoons olive oil

  • 5 cloves of minced garlic

  • 1 pinch of red pepper flakes

  • large bunch of Swiss Chard, rinsed well and chopped

  • 2-3 bunches of bok choy, rinsed and chopped

  • whole grain pasta, cooked according to the package

  • 1 oz grated parmesan

salt and pepper to tasteHeat a large pan over medium heat. Add the olive oil and garlic and sauté for about 1-2 minutes. Add the red pepper flakes and then the greens. Saute for about 2-3 minutes, until the leaves start to wilt. Turn the heat down to low, add the cooked pasta to the greens and toss to combine. Add in the cheese and toss. Serve immediately. Add salt and pepper to taste.
