Vegan Meringues

I am always looking to try new interesting recipes. When I heard that you could use aquafaba (the liquid from a can of chickpeas) to make meringues, I knew I had to try it.

I know it sounds crazy…but they are delicious! The way the aquafaba transforms into big fluffy clouds of meringue is magical!!! My entire family loved these! The next time you open a can of chickpeas save the liquid…I promise you will will thank me!

Vegan Meringues

INGREDIENTS:

  • Liquid from I can of chickpeas at room temperature

  • 1/4 teaspoon cream of tartar

  • 1/2 cup white sugar

  • 1/2 teaspoon vanilla (I think mint and coconut would also be delicious

    INSTRUCTIONS

    Preheat your oven to 250 degrees.

    Place the chickpea liquid (aquafaba) and cream of tartar into the bowl of an electric mixer. Start at slow speed and whip until foamy.

    Gradually increase the speed until white and glossy and stiff peaks start to form.

    Keep whipping at a fast speed as you slowly add in the sugar. Add in the vanilla.

    Whip until glossy stiff peaks form.

    Place the meringue batter in a large zip loc bag and cut out a small corner of the bag. Pipe onto a parchment lined try into cookie shapes. (Alternatively you can spoon it out, but I found piping to be much easier).

    Place into the oven and bake for 45 minutes. After 45 minutes, switch off the oven but DON’T OPEN IT (this is an important step). Leave the oven off, but don’t open it for one hour…set a timer! At this point they should be airy and crispy and delicious! ENJOY!

** Next time I’m going to try adding in some mini chocolate chips right before I pipe the meringues!
