Carrot Ginger Soup

I am kind of obsessed with veggies and always looking to increase my family’s intake!! This carrot ginger soup is simple, delicious and approved by the entire family! I Love to make a big batch and store it in the fridge for a quick grab and go meal!

Carrot Ginger Soup

INGREDIENTS:

  • 2 teaspoons avocado oil

  • 16 medium carrots, peeled and cut into 1-inch chunks

  • 1-2 tablespoons freshly grated ginger

  • 6 cups low-sodium vegetable broth

  • 1 can of light coconut milk

    INSTRUCTIONS

    Heat oil in a large soup pot over medium heat. Add carrots, and saute for about 3 minutes. Add ginger and broth, bring to a boil. Reduce heat to low, cover and simmer for 25 minutes or until the carrots are softened. Remove from heat and add coconut milk. Transfer to a blender and puree until smooth. Add salt and pepper to taste. Top with fresh herbs (dill or cilantro or parsley)
