French Lentils with Quinoa and Caramelized Onions

I love lentils (especially lentils from Trader Joe’s that are already cooked for me!). Not only do they taste delicious, they are high in nutritional value providing a great source of folate, fiber, iron and protein.
French Lentils with Quinoa and Caramelized Onions

  • 2 red onions, cut in half sliced thin

  • 1 tablespoon olive oil

  • 1 cup shataki mushrooms, stemmed and sliced

  • 1 tablespoon balsamic vinegar

  • 1 ½ cup cooked French lentils (I use Trader Joe’s cooked lentils)

  • 1 ½ cup cooked quinoa

Heat the olive oil in a large sauté pan. Sauté the onions for 30 minutes, stirring occasionally, until golden brown. Add the mushrooms, balsamic vinegar and 2 tablespoons of water and cook another 10 minutes. Add the lentils and quinoa and cook until heated through. Season with salt and pepper.
