Swiss Chard Quesidillas

Swiss Chard is a nutritional powerhouse. One cup contains only 35 calories but provides more than 300% of the daily value for vitamin K. It is also an excellent source of vitamins A and C and a multitude of phytonutrients. The amazing variety of phytonutrients it provides is seen in its vibrant colors. From its bright green leaves to the rainbow of colors in its stalks and veins…each color represents a different disease fighting nutrient. Just rinse the Swiss chard by rinsing several times in warm water then boil, steam, roast or saute and ENJOY! This recipe is SO simple, SO delicious and can be make with any leafy greens!
Swiss Chard Quesadillas

  • 1 tsp olive oil

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 1 tsp cumin

  • pinch of Kosher sat

  • 12 oz. Swiss chard, trimmed (or any leafy greens)

  • 2 10-inch whole wheat tortillas

  • 1/2 cup grated reduced-fat Monterey Jack cheese

Heat oil over medium heat. Add onion, and sauté 5 minutes, or until golden. Stir in garlic, cumin and salt and sauté 2 minutes. Stir in chard and reduce heat to medium low. Cover and steam 5 minutes, or until chard wilts. Uncover, and cook 3 minutes, or until liquid has evaporated.

Place 1 tortilla in skillet over medium heat. Sprinkle with 1/4 cup cheese. Top with 1/2 chard mixture, fold over and cook for 2 minutes per side, or until browned. Repeat with remaining ingredients. Slice into wedges; serve.

SO good with a cup of butternut squash soup!
